Ingredients

For the Batter

  • Gram Flour (Besan): 2 cups
  • Semolina (Rava): 2 tbsp
  • Yogurt: ½ cup
  • Water: ¾ cup (or as needed)
  • Fruit Salt (Eno): 1 tsp
  • Lemon Juice: 1 tsp
  • Salt: To taste

For the Orange Layer

  • Carrot Purée: ½ cup
  • Kashmiri Red Chili Powder: ½ tsp

For the White Layer

  • Plain Batter (no additions)

For the Green Layer

  • Spinach Purée: ½ cup
  • Green Chili Paste: ½ tsp

For Tempering

  • Oil: 1 tbsp
  • Mustard Seeds: 1 tsp
  • Curry Leaves: 8–10
  • Green Chilies: 2, slit
  • Sesame Seeds: 1 tsp

For Garnish

Shredded coconut: 2 tbsp (optional )

Chopped coriander leaves: according to taste

Step-by-Step Instructions

1. Prepare the Batter

  1. In a mixing bowl, combine gram flour, semolina, yogurt, and water. Whisk until smooth and lump-free.
  2. Add salt and lemon juice to the batter. Mix well and divide it into three equal portions.

2. Create the Tri-Coloured Layers

  • Orange Layer: Mix the carrot puree and Kashmiri red chili powder into one portion of the batter.
  • White Layer: Keep one portion plain.
  • Green Layer: Add spinach puree and green chili paste to the remaining portion of the batter.

3. Prepare the Steamer

  1. Grease a steaming plate or tin with oil and preheat the steamer.

4. Assemble the Layers

  1. Start with the orange layer: Pour the batter into the greased plate and steam for 5 minutes. This step will set the batter and next layer will not mix.
  2. Add the white layer: Gently pour the plain batter on top of the orange layer and steam again for another 5 minutes.
  3. Finish with the green layer: Pour the spinach batter on top and steam for 10 minutes or until a toothpick inserted comes out clean.

5. Temper the Dhokla

  1. Heat oil in a small pan. Add mustard seeds and let them splutter.
  2. Add curry leaves, green chilies, and sesame seeds. Saute for a few seconds.
  3. Pour the tempering over the steamed dhokla.

6. Slice and Serve

  • Once cooled slightly, slice the dhokla into squares or diamonds. Garnish with Shredded coconut and Chopped coriander leaves. Serve with green chutney or sweet tamarind chutney.
